Chateau Gautoul Cahors 2000 – Still deep ruby purple, with just a very slight fade on the edge, the color here is still very youthful. The nose has cool dark fruit tones, herbs, hint of mocha and leather and spice. On the palate it is still fresh, fine Cahors tannins still underneath but resolved from their youthful grip. Lovely core of compact dried dark and red fruits are focused but ample, and the wine has just a hint of classic country French rusticity. I would never have guessed this was 14 years old, maybe 2006 or 2005? A fun, unique classic wine from a somewhat unknown wine region that every true wine geek should try! Perfect with grilled meats – burgers, chicken, especially duck, or lamb, and also the classic wine for hearty winter fare like cassoulet, stews or game.
